These Raspberry & White Chocolate Heart Muffins are a gentle hug in food form. Baked in heart-shaped tins or classic muffin cases, each bite is tender, slightly sweet, and filled with the kind of comfort that lingers long after the last crumb is gone. Much like a handmade quilt, these muffins are crafted with care, meant to warm the soul and create memory-filled moments.

🧁 Ingredients (Makes 8–10 muffins)

  • 1¾ cups (220g) self-raising flour

  • ½ cup (100g) caster sugar

  • ½ tsp salt

  • 1 tsp baking powder

  • 100g unsalted butter, melted and cooled

  • 2 large eggs

  • ½ cup (120ml) milk

  • 1 tsp vanilla extract

  • 100g fresh or frozen raspberries

  • 80g white chocolate chunks or chips

Optional topping:

  • A light dusting of icing sugar or a few extra white chocolate chips for decoration

🌿 Method

  1. Preheat your oven to 180°C (fan 160°C). Line a muffin tin with paper cases, or lightly grease heart-shaped tins.

  2. In a large bowl, whisk together the flour, sugar, salt, and baking powder.

  3. In another bowl, combine the melted butter, eggs, milk, and vanilla extract until smooth.

  4. Gently fold the wet ingredients into the dry, mixing just until combined — overmixing will make the muffins heavy.

  5. Carefully fold in the raspberries and white chocolate chunks, taking care not to crush the raspberries.

  6. Spoon the batter into your muffin tins, filling each case about ¾ full. Sprinkle a few extra chocolate chunks on top if you like.

  7. Bake for 18–22 minutes, or until golden and a skewer comes out clean.

  8. Cool slightly before serving warm, with a cup of tea or coffee, or wrapped as a thoughtful gift for someone you love.
